This baked chicken with bell peppers and onions recipe is one you will be using a lot as it is not only easy to make, but it uses a few ingredients, is budget-friendly, and turns out delicious at all times.
There is no need to make any other sauce as the juice from the chicken, peppers, onions, and seasonings that pool in the tray is a tasty gravy that can be served with side dishes such as rice, pasta, or potatoes. I sometimes add half a cup of chicken broth to the tray when I want it more saucy.
I like that it is all cooked in a pan which means fewer dishes to wash up.
Although I used bone in chicken drumsticks for this post, another beauty of this recipe is that you can substitute chicken drumsticks for bone in chicken thighs and the same cooking time and directions apply. If you use chicken breasts, you will need to adjust the cooking time as it cooks faster than chicken thighs and drumsticks.
What You Will Need
Chicken drumsticks – This can be substituted for chicken thighs
Bell pepper- Red bell pepper or a combination of red and yellow pepper.
Onion- Yellow or Brown Onion
Tomato paste
Paprika – I like to use smoked Paprika
Garlic
Onion
Italian seasoning
Black pepper
Stock cube
Salt
Olive oil

Baked Chicken With Peppers and Onions
The step-by-step instructions for are as follows:
Clean and pat the chicken drumsticks dry with paper towels then set aside.
Rinse, dry, and cut the bell peppers into slices.
Cut the onions into similar sizes as the bell pepper.
Transfer the sliced bell peppers and onions to a baking tray.

Add the chicken drumsticks to the tray.
Pour in the olive oil, paprika, onion powder, garlic powder, Italian seasoning, crushed stock cube, black pepper, salt, and tomato paste.

Mix till the chicken, peppers, and onions are well coated in the seasoning mix. Spread out the chicken drumsticks on the onions and peppers.

Put the tray in the middle of the oven and bake at 400F/200C for 45-50 minutes. Flip the drumsticks after 25 minutes.
How long to bake chicken drumsticks in the oven at 400F /200C is 45-50 minutes. If baked at a lower temperature it might take longer to cook.
The chicken should be cooked to an internal temperature of 165F for food safety so it’s best to check with an instant thermometer to be sure.
Remove the tray from the oven, and let the chicken rest for 5 minutes. Serve with your choice of sides.

Rice – I like to serve it over white rice. It can also be served with yellow rice, seasoned rice, or brown rice.
Couscous, bulghur, and Quinoa are other grains you can serve with.
Potatoes- It goes with Mashed potatoes, boiled potatoes, baked potatoes, and roasted potatoes.

How To Store Leftovers
Let it cool completely, and transfer it into a sealable bowl. Store in the fridge for up to 3 days or in the freezer for up to 4 months. It can be reheated in the oven, on the stove, or in a microwave.
