I like that my loaf cake recipes don’t use loads of ingredients, just 6 ingredients, and you get a loaf that can serve 12 conveniently. Perfect for afternoon tea or coffee.

Loaf tin
Loaf tin liner– If you do not have the pre made ones, cut parchment paper into shape to fit the tins.
Mixing bowl- This is for mixing the cake batter in.
Scraper– To scrape down the sides of the bowl.
Mixer – Hand mixer or stand mixer but I prefer using a hand mixer for this recipe.
Cake cooling rack- To cool the cake when it comes out of the oven.
Ingredients
The five simple ingredients you will need for this recipe are :
Self raising flour – If you don’t have Self raising flour available, you can simply make one by adding baking powder to all purpose flour. Add 1 teaspoon of baking powder to every 100g of all-purpose flour (also known as plain flour).
Eggs
Butter
Sugar – Caster sugar or granulated sugar.
Vanilla extract
Baking powder– I like to add a little more to the self raising flour.

How To Make Sponge Loaf Cake
Measure out the ingredients.
Line the loaf tin with a cake liner. If a loaf liner is unavailable, rub butter on the inside of the cake pan and line the bottom and sides with parchment paper.
Add baking powder to the self raising flour and mix. Set aside.
Add butter and sugar to a mixing bowl and use an electric mixer to mix it until it’s light in colour and fluffy.

Break the eggs and add to the butter and sugar mix. Add vanilla extract and use the mixer to whisk it all together.
Add the flour, and use a spatula to mix then use the mixer on low speed to mix for 1 minute for all the ingredients to come together.

Pour the cake batter into a loaf tin.

Bake Sponge loaf cake in the oven at 160C/320F for 45-50 minutes or until it’s baked through inside. A skewer when inserted in the middle should come out dry.

Bring out the cake from the oven, let it cool in the pan for at least 5 minutes then turn it onto a wire rack to keep cooling.

Cut it, serve, and enjoy sponge cake.
