Wash the chicken, pat them dry with paper towels, and place them in a medium-sized bowl.
Preheat the oven to 400°F (200°C). This is necessary to ensure a consistent temperature in the oven.
Prepare the seasoning by mixing the Italian seasoning, garlic powder, onion powder, black pepper, salt, and paprika in a separate small bowl.
Pour the seasoning from step 3 into the chicken thighs.
Add olive oil to the bowl with the chicken and seasoning and mix till well combined.If you have the time, let it marinate for 30-60 minutes (this helps the seasoning infuse the chicken and make it flavourful). Arrange the thighs in a baking tray or dish and bake Italian seasoned chicken thighs in the oven at 200C/400F until they are cooked tender inside and the skin is crispy and browned (about 40-45 minutes).
Bring it out of the oven, let it sit and rest for about 5 minutes before serving.
