Ingredients

  • 1 kg Chicken Thighs
  • 1 teaspoon Italian seasoning
  • 1.5 teaspoon Paprika
  • 1/4 teaspoon Onion Granules/Powder
  • 1/4 teaspoon Garlic Granules/Powder
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Olive Oil
  • Salt to taste

Equipment

  • Baking tray

Method

  1. Wash the chicken, pat them dry with paper towels, and place them in a medium-sized bowl.
  2. Preheat the oven to 400°F (200°C). This is necessary to ensure a consistent temperature in the oven.
  3. Prepare the seasoning by mixing the Italian seasoning, garlic powder, onion powder, black pepper, salt, and paprika in a separate small bowl.
  4. Pour the seasoning from step 3 into the chicken thighs.
  5. Add olive oil to the bowl with the chicken and seasoning and mix till well combined.
If you have the time, let it marinate for 30-60 minutes (this helps the seasoning infuse the chicken and make it flavourful).
  6. Arrange the thighs in a baking tray or dish and bake Italian seasoned chicken thighs in the oven at 200C/400F until they are cooked tender inside and the skin is crispy and browned (about 40-45 minutes).
  7. Bring it out of the oven, let it sit and rest for about 5 minutes before serving.

Notes

  • Use a thermometer to check if the chicken is cooked through. The internal temperature at the thickest part should be at least 75C/165F
  • You can add some chilli flakes and adjust the black pepper to suit your spice level.
  • Ensure you space the chicken thighs evenly in the baking tray so they cook evenly.
  • Rest the chicken thighs for at least 5 minutes after they are out of the oven. This allows the internal juice to be redistributed for a juicy chicken.
