Oven Baked Buffalo Chicken Bites Recipe

This oven baked buffalo chicken bites recipe is simple with no breading. The spicy baked diced chicken cubes are tender, juicy, and bursting with flavor. They are great as appetizers or main dish.

Ingredients
  

  • 1 kg (2lb) Boneless chicken breast or boneless chicken thighs
  • 1 teaspoon Paprika
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon Mixed herbs
  • 1/4 teaspoon Black pepper
  • 1 teaspoon Salt or to taste
  • 1 tablespoon Olive oil
For Buffalo Sauce
  • 3 tablespoon Butter
  • 1/4 cup Franks Hot sauce
  • 1 tablespoon Honey
  • 1/8 teaspoon Garlic powder
  • 1 teaspoon Worcestershire or soy sauce
  • 1 tablespoon Cider Vinegar optional

Method
 

  1. Make the buffalo sauce - Melt the butter in a small bowl, then add hot sauce, honey, garlic, and worcestershire sauce. Mix till they are well combined. Set the buffalo sauce aside.
  2. Prep the chicken - Dice the boneless chicken breast or boneless chicken thighs into 1-11/2 inch cubes and pat them dry with paper towels.
  3. Season the diced chicken - Combine the paprika, onion, garlic, mixed herbs, black pepper, and salt. Add olive oil and the seasoning to the diced chicken. Mix till well combined.
  4. Bake- Spread the seasoned diced chicken in a single layer in a baking tray. Bake chicken breast bites at 400F/200C for 18-20 minutes or until cooked.
    Bring out the tray, add buffalo sauce to the baked chicken bites and toss mix till well combined. Let it rest for a few minutes.
  5. Serve and enjoy.

Notes

  • Cut the chicken into 1-2 inch cubes so they remain bite-sized and cook quickly.
  • You can double the buffalo sauce and save it for another time.
  • The baking tray should not be crowded. Use a baking tray big enough to fit the diced chicken, with spaces in between them so they cook evenly.
  • Once the chicken bites are done, take the tray out of the oven. Don't leave the chicken in the oven to avoid them drying out with the retained heat in the oven.
  • Allow the chicken to rest for a few minutes before you serve them.
