Clean the chicken thighs and remove any hanging fat around them. Pat them dry using paper towels.
Mix the honey, soy sauce, garlic, onion, mixed herbs, paprika, salt, oil, and black pepper.
Pour the mixture on the chicken thighs and mix till the thighs are evenly covered in the marinade. Let this marinate for 30 minutes to 4 hours.
Preheat the oven to 400°F (200°C) so it reaches the right temperature before you place the marinated chicken.
Arrange the chicken thighs in a baking tray and bake honey chicken thighs in the preheated oven for 45 minutes. Turn the chicken after 25 minutes so the other sides brown as well.Use a thermometer to check if the chicken is cooked to an internal temperature of 160F/75C. Bring out the oven tray with the baked chicken thighs using an oven glove to put it on a cooling rack and let it sit for about 5 minutes before you serve.
